Bourbon beans ripen at an altitude of 1 , 650 meters above sea levelin the Acatenango region. This area is specific for its rich volcanic soil and unique microclimate, which forces coffee trees to ripen more slowly. The family that owns the La Soledad farm places great emphasis on sustainable agriculture and precise harvesting, with only perfectly ripe fruits being allowed to enter the next stage of processing. Thanks to this, the coffee retains its typical regional nobility and sparkle.

Processing is carried out using the classic washed method, which brings out the natural character of the Bourbon variety without any secondary fermentation flavors. After careful removal of the pulp and washing in clean water, the beans are dried in the sun, which is strictly monitored to achieve ideal moisture content. The Nie Czapla roastery has chosen a light roast intended for non-invasive preparation methods such as V60, Chemex, or Aeropress. The result is a cup that embodies both the sun of Guatemala and the craftsmanship of Gdańsk's master roasters.
