This limited-edition coffee from Ethiopia by Wave Roasters pushes the boundaries of what you expect from a cup of coffee. Aged in a port wine barrel, this coffee draws you into a world of sweet, deep notes from the very first whiff. The flavor profile features the sweetnessof driedfruit and strawberry jam, complemented by notes of seductive vanilla and the scentof white flowers.An unmistakable woody undertone winds throughthe flavorprofile. The overall profile is full-bodied, rounded, and dessert-like, with a long finish that lingers on the palate long after the last sip.

The foundation of this coffee is carefully selected beans from Ethiopia, the very cradle of coffee. Behind this lot lies a process that is becoming increasingly popular in the coffee world— barrel aging. After the cherries undergo classic washed processing directly on the farm, they are sent to the roastery. Here, the green beans are stored for several weeks in barrels that previously held high-quality port wine. During this resting period, they absorb the aromas and flavor compounds from the wood and residual wine, which gives them a unique character. The result is a coffee that combines the clean, washed profile of Ethiopian beans with the fruity notes of red wine, subtle tannins, and deep sweetness. Every barrel is different, so each batch has a slightly different character, and that is precisely where its magic lies.
