This lot comes from the Yirgacheffe region in southern Ethiopia, where coffee is grown at an altitude of up to 2,200 meters above sea level. This high altitude slows down the ripening of the coffee cherries, which has a significant impact on the development of complex flavors and distinctive aromas. The producer is Testi Coffee, or rather Faysel Adham Yonis, one of the most respected figures on the current Ethiopian coffee scene. Testi Coffee is known for its emphasis on precise selection, close cooperation with local farmers, and efforts to preserve the unique character of individual micro-regions. Coffee trees here grow on small family farms, often without the use of chemical fertilizers, in the natural shade of native vegetation.
Processing is done using the washed method, which is typical for Yirgacheffe and allows the purity and delicate fruity tones to stand out. After being harvested by hand, the cherries are carefully sorted, fermented in water, and then thoroughly washed. Drying takes place slowly on raised African beds, which contributes to even drying and stable bean quality. The result is a coffee with brilliant purity, elegant structure, and a typically floral, fruity character. Bishan Wate is a prime example of modern Ethiopian coffee—delicate, sweet, and incredibly drinkable, ideal for filter coffee, but surprisingly beautiful even in a lighter espresso.
