Ecuador FELIX MOROCHO from the American roaster Sey Coffee will delight all lovers of washed specialty coffees. The flavor opens with juicy peach, complemented by sweet star fruit and fresh notes of lemongrass. The individual flavors complement each other, creating a balanced cup with subtle fruitiness and a pleasantly fresh character.
Behind this lot is producer Felix Morocho, with whom the American roaster Sey Coffee began collaborating this year as part of its Ecuadorian project. Although this is their first year working together, the quality of his coffee impressed the roaster so much that it has also added a second harvest from this year’s crop to its lineup. The Mejorado variety, which is grown almost exclusively in Ecuador, also plays a major role in this. For a long time, it was considered a variant of the Typica variety, but genetic research has shown that it originated from a natural cross between the Bourbon variety and an Ethiopian landrace. It is precisely thanks to this unique combination that Mejorado ranks among the most interesting varieties found in Ecuador today.
This lot underwent washed processing. The coffee cherries were first hand-harvested at optimal ripeness and then submerged in water to remove lower-density cherries and any defects. The cherries were left whole overnight. They were then pulped and dry-fermented for 36 hours. Finally, the coffee was dried on elevated African beds until it reached a moisture content of 10.5%. This carefully controlled process helps preserve the clean flavor profile and character of the Mejorado variety.
