The beans come from Colombia, specifically from theHuila andBruselasregions, and are part of theZarza Bourbon Ajilot fromFinca Zarza, produced by Jonathan Gasca and Alejandra Muñoz Ortiz. The Gasca family bases its work on innovation, traceability, and a sustainable approach. The Cenicafe variety delivers distinctive aromatics and fruitiness that come through in full force in the cup. The coffee grows at an elevationof 1,750–1,900 meters above sea level, which contributes to its juiciness and complexity.
The beans were processed using the anaerobic natural method, which is what gives this coffee its juicy, tropical character. The cherries undergo a multi-step natural process that involves harvesting, fermentation, and careful management of oxidation.
