This Colombian coffee from Manhattan Coffee Roasters will captivate you with its delicacy and distinctive character. It combines notes of yellow plums and figs with a hint of Earl Grey. The fruity notes are accompanied by a delicate sweetness and a hint of tea, giving your cup an elegant and balanced profile. On the palate, the coffee is lively yet pleasantly rounded, allowing you to savor each nuance without any single flavor overpowering the others. This Gesha also took fifth place in the Western Division of the 2025 Copa de Oro competition.
Behind this coffee is Yilver Andrés Pajoy Ipia, a second-generation grower from the rural area of Alto Cañada in the town of La Plata, located on the western edge of Colombia’s Huila region near the border with Cauca. He has been growing coffee for fourteen years on his four-hectare farm, Finca El Arrayan, at an elevation of 1,860 meters above sea level. He has set aside three hectares of steep, green slopes for coffee trees, where, in addition to Gesha, he also grows the Caturra and Caturra Chiroso varieties. Together with his family, he also grows beans and raises cattle.
This Gesha micro-lot underwent a washed processing method with two fermentation stages. After harvest, the whole cherries were first fermented for 36 hours. This was followed by the removal of the skin and part of the pulp, after which the beans underwent another 36-hour fermentation without added water. Only then were they thoroughly washed and spread out on elevated drying beds. Drying took place over 18 days in a parabolic greenhouse dryer, which constituted the final stage of processing for this competition lot.
