India is making its debut in the lineup of the Dutch roastery Manhattan Coffee Roasters; the Gundikhan coffee offers an unusual combination of fresh green apple, the subtle sweetness of brown sugar, and the citrusy, spicy notes of black loumi lime. This adds an interesting depth to the cup and a slightly bitter note that pleasantly complements the fruity freshness. The entire flavor profile is rounded out by a rich, long-lasting aftertaste with pronounced sweetness and a fuller mouthfeel.
The coffee comes from the Gundikhan Estate in the Chikmagalur region of Karnataka, India, where it is grown by Saif Ulla at an elevation of 1,300 to 1,400 meters. The farm is part of the Kaad Kaapi association, which combines specialty coffee production with the protection of the local natural environment. Coffee trees here grow under the dense shade of native trees, which provide refuge for elephants, tigers, Indian gaurs, and many species of birds. While preserving this environment means lower yields and higher costs, it helps protect local biodiversity.
The farm grows the Sarchimor variety, which was created by crossing the Villa Sarchi and Timor Hybrid lines and is known for its resistance to coffee rust. This lot underwent washed processing with fermentation using yeast. Unlike the standard washed method, this fermentation process uses yeast to help influence the breakdown of sugars and other compounds present in the coffee. The result can be a more pronounced aromatic profile while maintaining the clean character typical of washed coffees. It is precisely this combination of an unconventional origin, variety, and processing method that makes Gundikhan an interesting addition to Manhattan’s lineup.
