Behind this coffee is producer Policarpo Yossa Rojos, who grows coffee trees on the Finca Buenos Aires farm in the El Mesón area of Colombia’s Huila region. The farm lies at an elevation of around 1,548 meters, where the ideal combination of climate and soil allows the cherries to ripen slowly and develop delicate aromas. Policarpo focuses on careful harvesting and high-quality work on the farm, resulting in coffees with a clean and distinct character. The Huila region is now one of the most prominent producers of specialty coffee in Colombia, and lots like this one demonstrate exactly why.
Processing is done using the washed method, which highlights the natural elegance of the Gesha variety. After being hand-harvested, the cherries are pulped and then fermented to remove residual mucilage and enhance their natural acidity and aromatic clarity. The coffee is then thoroughly washed and dried under controlled conditions to preserve its delicacy and structure.
