Pinky Swear is a micro-lot from DAK Coffee Roasters that showcases the beauty of the meticulously processed Pink Bourbon cultivar in its purest form. In the cup, you will be greeted by an elegant, terroir-driven profile with delicate aromatics and balanced sweetness. Floral notes of jasmine and hibiscus dominate, complemented by a soft sweetness and an aftertaste reminiscent of ripe figs. The coffee is very smooth, delicate, and sophisticated —an ideal choice for filter coffee lovers looking for a calm, detailed, and harmonious flavor without excessive wildness.
The coffee comes from the Costa Rica farm in the Santa María, San Joaquín area of the Huila region, which is managed by farmer Faver Ninco. The farm is located at an altitude of approximately 2,100 meters above sea level and covers an area of 10 hectares. It is planted with more than eleven varieties of coffee trees, reflecting the richness of the local terroir. Faver Ninco is known for his disciplined and meticulous approach – instead of following trends, he focuses oncraftsmanship and building his own "recipe" for exceptional coffee. He lives on the farm with his family and personally oversees the entire cultivation and processing process.
Processing is carried out using the washed method with an emphasis on detail. Hand-picked, perfectly ripe cherries are fermented for 24-30 hours, then the pulp is removed and a second, anaerobic fermentation lasting 60-80 hours follows. The coffee is then washed once, leaving a thin layer of mucilage to enhance the body and fruitiness. Drying takes place in a marquee for 10-15 days, contributing to a clean, elegant, and balanced flavor profile.
