This unique coffee from the Huila region in Colombia brings a flavor profile that you’ll fall in love with: raspberries, plum jam, and Nutella. The sweetness and fruitiness are preserved thanks to the natural processing followed by the gentle Sugarcane Method Decaffeination process using ethyl acetate (EA). The result is a coffee that is perfectly balanced, full-bodied, and without any compromise in flavor. Ideal for filter brewing, this coffee proves that you can enjoy a great cup even without caffeine.
This lot is the result of collaboration between the Azahar Coffee cooperative and carefully selected small farmers from the Huila region. Each of them contributed their part to create this unique blend of Castillo and Colombia varieties, grown at altitudes of up to 1900 meters above sea level. The beans are processed using the natural EA method (using ethyl acetate derived from sugarcane), which gently removes caffeine without affecting the flavor profile. This process combines modern science with respect for traditional coffee cultivation methods, giving this decaffeinated coffee its unique character.
The decaffeination process starts with steaming the beans, preparing them for hydrolysis of the caffeine. Then, natural extracts from sugarcane are applied to the beans, which are repeatedly agitated to remove the caffeine without compromising the flavor integrity of the beans. The result is a coffee with prominent fruity tones, chocolate, and sweetness, retaining its full flavor even after decaffeination.
This project was developed in collaboration with Nordic Approach, ensuring both high quality and transparency throughout the process. The natural processing before decaffeination imparts a richer and sweeter flavor profile to the coffee, allowing you to enjoy a truly exceptional cup – all without caffeine!
