This Colombian coffee from the Danish roastery The Coffee Collective, which operates in Copenhagen and Aarhus, is a filter coffee with a bright, lively, and very elegant profile, characterized by red fruit juiciness, natural sweetness, and subtle complexity. Rosehip, red currant , and cherry unfold in the cup , giving the coffee a refreshing character while maintaining a very pleasant roundness and calmness. It is not a sharp or overly acidic cup. On the contrary, it is a profile that is fresh and lively, yet still smooth and very well-balanced. Rosehip brings a subtle herbal and fruity note, red currant adds juiciness and energy, and cherry rounds out the entire profile into a sweeter and fuller finish. This is a coffee that demonstrates just how attractive Pink Bourbon can be when good origin, high-quality production, and washed processing come together.

The coffee comes from Colombia, from the Huilaregion, and is produced by Luis Edgar Camacho Mateus on the La Palma farm . Pink Bourbon coffee trees grow at an elevation of 1,733 meters above sea level, where they have ideal conditions to develop a clean, sweet, and lively profile. Pink Bourbon is a variety prized for its elegance and distinctive aroma, and it is here that its potential truly shines. La Palma Farm and Luis Edgar’s work give rise to a coffee that doesn’t just make an impression on the first sip but maintains its character throughout the entire cup. The high quality of production translates into clarity and consistency of flavor, so individual notes don’t feel fragmented but come together as a cohesive whole. This is exactly the type of filter coffee that doesn’t rely on heaviness or excessive fermentation notes, but on subtlety, clarity, and natural fruity energy. In the cup, you get a profile that is elegant yet still distinct enough to leave a lasting impression.

The coffee is processed using the washed method, which gives it a clear progression, purity, and very well-defined acidity. Washed processing serves as the foundation for the cup’s overall elegance. Thanks to it, the rosehip freshness, currant juiciness, and cherry sweetness stand out without unnecessary overlap or distracting notes. The resulting brew is very precise and well-defined. The individual flavors unfold gradually but naturally, so the cup remains lively from start to finish. At the same time, it retains a natural sweetness that lends it calm and balance. It is precisely the combination of washed processing and the Pink Bourbon variety that gives this coffee its refreshing yet consistently elegant character. Instead, it relies on harmony, clarity, and subtle complexity, which you’ll appreciate especially when you want a filter coffee that’s light yet not lacking in depth. It’s a very clean and balanced cup that shows even a more delicate profile can be distinctive and memorable.
