Vanilla Coca-Cola, juicy nectarine, and white flowers—this combination is just begging to be tasted. Colombia LA PALMA from Ovni Coffee has a playful sweetness accompanied by a delicate floral note and fruity freshness. The bold opening gradually gives way to a long finish reminiscent of cane sugar. You’ll love this if you enjoy discovering unusual combinations in your cup and are looking for juiciness and a touch of acidity alongside sweet notes.
Finca La Palma is located in the cloud forests of the Pueblo Rico area in Colombia’s Risaralda region, at an elevation of 1, 800 to 1,950 meters. It belongs to the Chocó biogeographic region, one of the wettest and most species-rich environments in the world. Regular rainfall, high elevation, and the local climate slow down the ripening of the cherries. The project is led by Yeimy Loaiza, under whose guidance Andrea and Jaime oversee production on the farm. They emphasize selective harvesting and meticulous post-harvest processing. In 2026, this coffee won 3rd place at the Madrid Coffee Fest auction.
The lot consists of the aromatic Colombian Caturro Chiroso variety, which underwent a washed process with controlled fermentation for 48 hours. It all begins with the careful selection of cherries during harvest, followed by controlled post-harvest processing. Fermentation is part of the washed process, and the producers manage it with an emphasis on preserving the coffee’s clean profile. They work with the characteristics that the beans developed during their slow ripening at high altitudes. The goal is to let the variety’s character shine through while ensuring consistent quality across individual lots.
