This Ethiopian Shoondhisa from London-based Square Mile Coffee Roasters is exactly the kind of coffee that disappears from the pot suspiciously fast. The flavor profile features nectarine, honey, and lychee, giving it a sweet, juicy, and pleasantly exotic character. Stone fruits give it a fresh fruitiness, honey adds a subtle sweetness, and lychee shifts the entire profile toward a slightly floral and tropical note. Square Mile describes it as a coffee you’ll happily reach for all day long, and given its light roast and clean, fruity character, that makes perfect sense.
The coffee comes from Guji in Ethiopia and is produced by small-scale farmers working with Sookoo Coffee, which oversees the cultivation, processing, and export of a range of local coffees. Square Mile has a long-standing partnership with Sookoo Coffee and has been sourcing this specific lot since 2023. Coffee cherries from local growers are sent to the Suke Drying Station for processing. This year’s harvest was slightly delayed compared to the usual schedule, so the station was still receiving fresh cherries throughout February 2026. The lot consists of the Ethiopian varieties Gibirinna 74110 and Serto 74112.
Shoondhisa was processed using the natural method, meaning the coffee cherries are dried whole, along with their pulp. At the Suke Drying Station, they are spread out in a very thin layer for the first 4–5 days to ensure even drying. The layer is then thickened, and the coffee is dried for another 2 weeks. It is precisely this process that helps develop the distinctive stone fruit notes that Square Mile loves so much in Shoondhisa, while preserving the clean and fresh character of the resulting cup.
