The natural hydro honey method begins with drying whole ripe cherries on raised beds for approximately eight days. This is followed by fermentation in water tanks for 18–24 hours, which rehydrates the cherries and makes them easier to peel. After the skin is removed, the coffee with some of the pulp is spread out again on raised beds, where it dries for another 25–30 days until it reaches the ideal moisture content. This process combines a sustainable approach with the creation of a unique flavor profile, in which the sweetness of the honey method is combined with juiciness and fruity complexity.
