This semi-washed Pink Bourbon will immediately appeal to you with its lightness, purity, and delicate fruity elegance. In your cup, you'll find strawberry sorbet, lemonade, and red currants, all on a smooth, velvety body with a clean, sparkling acidity. The aftertaste is sweet, long, and interwoven with notes of small berries—a cup you'll enjoy both as an espresso and a filter coffee.

This lot comes from the Finca Bet-El farm in the Cauca region, founded in 2017 by César Lasso. The plantation, located at an altitude of 1 , 600 meters above sea level, has over three thousand trees that grew from seeds donated by renowned producer Diego Samuel Bermúdez from the Paraíso farm. Pink Bourbon shows itself here in all its beauty – as a variety full of delicacy, floral elegance, and fresh fruitiness.

The coffee undergoes a unique semi-washed double fermentation process, which fundamentally shapes its character. First, the cherries are hand-picked and sorted, followed by 48 hours of whole fermentation with the addition of lactic cultures in an anaerobic environment. After hulling, the beans undergo 36 hours of fermentation in a tank with water and leachate from naturally processed Geisha, which adds further depth and fruitiness to the beans. The coffee is then slowly dried – first in a solar dryer, then at a controlled temperature of no more than 39°C to preserve its purity and delicacy.

It's nice when it's cold. It doesn't stand out as much when it's hot.
The natural processing method did not bring out the fruity flavors as well as co-fermentation did.
