The coffee comes from Finca Milan in Colombia, where producers have long focused on modern fermentation processes and precise work with the Castillo variety. The coffee trees grow at an altitude of around 1,400 meters above sea level, which, together with careful selective harvesting of fully ripe cherries, creates a good basis for a complex, clean cup. Electric Lime is one of the lots that show how far Colombian coffee can go when the producer's experience is combined with a desire to seek new expressions.
The processing combines controlled fermentation with the use of yeast and the addition of fresh pineapple, lychee, and local aromatic plants, after which the coffee is finished as washed. After 48 hours of controlled oxidation, the cherries are hulled and sent to a closed bioreactor for another 48 hours of fermentation. The coffee is then washed, dried in several stages at carefully controlled humidity, and finally rested for about a month to stabilize its profile. The result is a cup that combines the purity of washed processing with the intense, "electric" aromatics of co-fermentation.
