Oscar Hernández is known for exploring the limits of varieties and methods at DAK Roastery – Pimienta is one of his rarer varieties that offers something new to anyone who loves innovation and depth of flavor. Finca Los Nogales is located at an altitude of around 1,750 meters above sea level, in the microclimate of Huilly, where cool nights and sunshine during the day allow for slow ripening and the development of complex profiles. Here, it is not only the variety that matters, but also the soil, the air, and the care – as they do at DAK with every batch that enters their selection.
The Thermal Shock Natural processing method highlights the experimental spirit of the variety. After harvesting, the cherries are left to ferment with controlled temperature shock, which intensifies the fruity notes and reveals layers of aroma that would otherwise remain hidden. The Natural method also means that the pulp remains on the bean – bringing exceptional sweetness and body. The result is a coffee that works perfectly as a filter – where all the nuances can unfold – but also serves excellently for lovers of a bright, clean sip.
