Colombia Awesome Autumn Special from the Polish roaster HAYB is an autumn coffee that certainly doesn’t play it safe. In the cup, bold notes of bourbon and cola meet juicy orange and subtly bitter cocoa. The sweeter, spicy base feels warm and full-bodied, the citrus notes pleasantly lighten the coffee, and the cocoa finish adds depth. The result is a bold and somewhat unexpected profile that’s perfect for cooler days, leisurely mornings, and evenings when you’re in the mood for something truly unconventional.
The coffee comes from the Cauca region of Colombia, one of the country’s most renowned areas for specialty coffee. This lot consists of the Caturra, Castillo, and Typica varieties, which together provide a diverse foundation for further processing. Thanks to its mountainous terrain and long tradition of coffee cultivation, Cauca is known for lots with a clean and distinctive character; here, however, the classic Colombian foundation takes on an even more distinctive character thanks to the subsequent barrel-aging process.
First, the coffee undergoes washed processing, during which the husk and pulp are removed after harvest and the beans are thoroughly washed. This method helps preserve the purity and clarity of the original flavor profile. Next comes the barrel-aging phase, during which the beans rest in a bourbon barrel and gradually absorb additional aromatic layers. It is precisely this step that gives the coffee a more pronounced, warm character, featuring notes of bourbon and cola, while orange adds juiciness and cocoa provides a pleasant finish to the entire cup.
