Well, in the end, it was actually pretty fun. It responds well to heat, grinding, and mixing.
tastes good even without milk
Actually, I expected the coffee from Mexico to be pretty weak, but it turned out to be pleasantly fruity and light.
I still couldn't shake the bitterness—subjective, perhaps—like a grindstone

Water (g):
Water temperature: 90°C
Grinder (setting): same as for drip coffee
Process: do not stir, 1:30 min

I tried it in Jizba, it tastes good with milk, but I've had others that go better with milk recipes. We had two different ones from this roastery for filter coffee and they were more impressive.
