Peru Trabaconas Washed from Pražírna Krok is an espresso that combines juicy fruit, honeyed sweetness, and a delicate floral note. The flavor profile features strawberries, mango, honey, and floral notes, so it doesn’t come across as a heavy, chocolatey espresso, but rather as a fresh, sweet, and elegant cup with a pleasant fruitiness. It shines beautifully on its own, showcasing its fruity acidity and clean finish, but thanks to its honeyed sweetness, it also works well in milk-based drinks.
The coffee comes from Peru, specifically the Cajamarca region, and more precisely the Tabaconas district in the province of San Ignacio in the north of the country. This region lies near the border with Ecuador and is known for its steep terrain, misty forests, and a long tradition of coffee cultivation. The altitude here ranges from approximately 1,100 to 2,400 meters above sea level, which, together with various microclimates, creates ideal conditions for growing Arabica. Behind this coffee are small-scale farmers supplying to Tabaconas, specifically a community of about 505 families of small growers. Most farms are only 2 to 5 hectares in size, and the coffee trees grow in the shade of native trees.
The variety is a blend of Typica, Bourbon, Pacamara, and Geisha. The coffee is washed-processed, giving it a clean and elegant profile. After harvest, the ripe cherries are sorted, pulped, and the beans are stripped of the remaining pulp layer through fermentation and washing with water. They are then dried to preserve consistent quality and a distinct character. The result is an espresso with fruity sweetness, delicate floral notes, and a clean finish.
