The coffee comes from the La Lima farm in the northern Peruvian region of Cajamarca, one of the most important areas for specialty coffee production in Peru. The local mountainous landscape offers ideal conditions for growing coffee plants—a combination of high altitude, a stable climate, and fertile soil. Farmer Jorge Zamora oversees the production of this coffee, dedicating himself to coffee cultivation with an emphasis on quality and meticulous work throughout the entire process, from harvest to drying. The coffee trees here grow at an altitude of approximately 1,850 meters above sea level, which allows the coffee cherries to ripen more slowly. As a result, more sugars and aromatic compounds develop in the bean, which subsequently translate into a more complex and sweeter flavor in the cup.
This lot consists of the Caturra variety, which was processed using the washed method. After harvesting, the coffee cherries are stripped of their skin and pulp, then fermented in water to remove mucilage residues, and finally the beans are dried. This processing method primarily highlights the coffee’s clean flavors, balance, and natural sweetness. The result is a very clean and elegant filter coffee in which subtle notes of nougat and dried fruit stand out beautifully.
