Tierra Linda means “beautiful land,” and with this coffee from Father’s Coffee Roastery, the name makes sense given how the farms manage the soil, shade, and plant health. This is reflected in its flavor profile, where you’ll find notes of gingerbread, sour cherries, and lemon balm tea, which together create a calm and clean character that has made it a favorite at the roastery.

The coffee is grown on two neighboring farms in the Las Manos community in the Dipilto area of Nicaragua’s Nueva Segovia region. The first, Finca Santa Isabel, is a family-run farm that has been in operation for more than seventy years and lies at an elevation of 1, 220 meters above sea level, while the second, Finca Mirjam—which the family acquired in 2025—is located west of it at an elevation of 1,252 meters. Together, they comprise eighteen hectares of coffee plantations. The coffee trees grow here under the mixed shade of Inga trees, native deciduous trees, erythrins, banana trees, and fruit trees; the plots maintain thirty to fifty percent shade, and at Santa Isabel, an additional fifteen hectares of pristine forest are protected. Plant health is managed through a combination of gentler synthetic inputs, the farm’s own compost, and organic fertilizer made from coffee pulp, supplemented by regular pruning and shade management. This lot is based on the Caturra and Red Catuaí varieties, where Caturra is an Arabica commonly grown in Latin America, and Red Catuaí was created by crossing Munda Nova with Caturra and is prized for its yield and shorter stature.

The coffee undergoes washed processing. The harvested cherries are first sorted by hand, then separated by density in a water bath, and allowed to rest for eighteen hours before processing begins. At Finca Santa Isabel, the cherries are then hulled, and the beans are fermented in tiled tanks for twenty-four to thirty-six hours, after which they are thoroughly washed. Cherries from Finca Mirjam, which does not have its own wet mill, are transported to the neighboring family farm, Finca Bethania, where processing follows the same strict procedures for sorting, fermentation, and quality control. All coffee is then transported in parchment—that is, in its protective husk—to the Cafetos de Segovia dry mill, where it is stored under controlled conditions and prepared for export. Both wet mills minimize water consumption and divert the water they use to dedicated oxidation tanks, thereby helping to protect local waterways.
