Industra Coffee has prepared some extraordinary new beans from Mexico just for you. In the cup, this coffee reveals a distinctive profile with notes of rum—the result of fermentation—complemented by bittersweet cocoa and a fruity hint of blackberries. The flavor is full-bodied, with a long finish and a subtle hint of fermentation that doesn’t feel intrusive but instead highlights the coffee’s character. The blend of Typica, Bourbon, and Mundo Novo varieties provides a balanced foundation, ranging from gentle acidity to a full body and natural sweetness. Typica and Bourbon add elegance and complexity, while Mundo Novo contributes to a more robust body and flavor stability.
The Montaña Alta farm is located in the mountainous region of Guerrero in southern Mexico, an area long associated with the production of high-quality specialty coffee. The altitude, rugged terrain, and alternating wet and dry seasons create conditions for the slow ripening of the cherries, which directly translates into the complexity of the resulting cup. Guerrero is among the less commercial, yet all the more interesting, coffee-growing regions. Production here is often in the hands of smaller family farms, where the emphasis is on meticulous work during both harvesting and processing. The Carranza family embodies this very approach. The family farm operates in an environment where coffee is traditionally grown in the shade of native trees, which contributes to biodiversity and a more stable microclimate, and the farm is a natural edible forest.
Hand-picking selects only fully ripe cherries, which are then processed using the anaerobic natural method. This process takes place in a sealed environment without oxygen, where controlled fermentation occurs. The result is enhanced sweetness, a deeper body, and a more pronounced aromatic profile, without the coffee losing its clarity.
