About BirdSong Coffee

The story of BirdSong Coffee began with an interest in sustainable agriculture, when it was realized that coffee is not just a crop, but a natural part of a functioning ecosystem. BirdSong is a symbol of harmony. The harmonious coexistence of birds, trees, and coffee trees in the landscape, but also a peaceful moment over a cup of good coffee. As early as the 1960s, environmental pioneer Rachel Carson drew attention to the fragility of this relationship in her book Silent Spring, which is considered one of the most influential environmental books of the 20th century. In it, she warned of a "silent spring" – a landscape without birdsong, caused by human intervention, chemicalization, and the destruction of the natural environment.

BirdSong Coffee was founded in 2014 thanks to the enthusiasm of two sisters, Linda and Dana, who decided to support traditional and sustainable coffee cultivation. A key experience for Dana was an internship in Ethiopia and her encounter with the first Bird Friendly® certified farm in Africa. It was there, at the Yeti farm, which was the first partner farm and where traditional farming goes hand in hand with nature conservation, that she visited a forest coffee farm for the first time. In these places, coffee works in symbiosis with native trees and animals—a model that has become the basis of the brand's philosophy. In 2017 , Dana and her family moved to Uganda, where she and her partners founded The Coffee Gardens project. Its goal is to produce specialty coffee in close cooperation with local farmers, with an emphasis on quality, work ethics, education, sustainable cultivation, and long-term community stability. The current form of BirdSong Coffee is shaped by two sisters-in-law, Linda and Linda, whose cooperation and clear division of roles have brought greater stability and room for further development. BirdSong Coffee has thus entered a new phase without losing what is essential: respect for nature, the origin of coffee, and the values on which it has been based from the beginning. The brand remains a family business with its own facilities and showroom in Radlice, Prague.

Today, BirdSong Coffee focuses on select Arabica beans from forest and wooded farms (shade-grown), where coffee trees grow under the natural shade of trees. This method of cultivation promotes biodiversity, protects the natural environment, and provides small farmers with a more stable source of livelihood. Since 2025, BirdSong Coffee has been roasting coffee on its own Diedrich IR-12 roaster. This step was a natural continuation of the brand's long-term development and also allowed for greater control over quality and the resulting flavor profile. BirdSong Coffee focuses on roasting that allows the natural character of each coffee to shine through and on single-origin Arabica beans with a clear origin. You can find their coffee in cafés and shops that share the same respect for origin, quality, and nature.

A key milestone was the introduction of Bird Friendly® certification, which combines organic farming, biodiversity, and the protection of the natural environment of birds. Most of the coffees offered meet the criteria for organic farming , and some even meet the criteria for the strictest Bird Friendly® ecological certification .

I prepared the coffee in a moka pot and it tasted bland, it is possible that if the coffee was prepared using a different method, it would have been stronger.

Red Bourbon + Typica are my favorite varieties
My favorite varieties were crushed by the roaster by roasting them dark, thus erasing their wonderful and delicate flavors. Once you dark roast anything, everything tastes just like ex-communist Standard coffee. :( Exactly as I expected. :((
