Pedro Garcia Diaz has made perfect use of the exceptional natural conditions on his farm La Esperanza, in the San José del Alto region of Cajamarca, Peru. The result of his careful work is fruity notes of raspberries and strawberries with a sweetly jammy texture. Pedro applies a modern approach to coffee processing that is becoming typical of the region: the Catuaí and Pache cherries are fermented for 36 hours, followed by the removal of the pulp, another wash and a careful, slow drying.
The other half, Yuki Minami's Brazilian Aequitas Decaf, comes from her family's farm in the Cerrado region of Minas Gerais. This coffee is specially selected for decaffeination using a gentle method using ethyl acetate (the ethyl acetate method uses a natural compound derived from, for example, sugar cane or fruit; the coffee is washed in it to gently remove the caffeine while preserving the original flavour profile), which preserves the coffee's natural flavour qualities. Yuki founded the export company Aequitas to promote fair conditions for farmers not only in Cerrado but also in other regions of Brazil.
