Dutch roaster DAK Coffee Roasters is back with another irresistible treat from Ethiopia! This roaster once again proves that playfulness and originality go hand in hand with quality. Imagine the refreshing and juicy taste of grapefruit lemonade, complemented by pieces of fresh orange and finished with sweet jelly candies. The result is a coffee that smells like a sunny summer day.

This coffee grew on trees near the Buku River, which flows between mountains at an altitude of around 2,000 meters above sea level, near the village of the same name in the Guji region of Ethiopia. The coffee trees here have ideal conditions—plenty of sunlight, cool winds, and red, fertile soil. The beans were processed at the Buku Abel station, founded in 2019, which today processes cherries from around 400 local farmers. They bring their harvest around noon and sort it by hand until late afternoon.

The coffee beans from the farmers are then processed using the dry or natural method. This involves spreading the whole, unpeeled coffee cherries out and drying them in the sun. This method preserves the fruity flavors in the coffee beans, emphasizingtheir naturalsweet and fruity taste. The dry method ensures that the resulting cup of coffee has a full body and a more pronounced sweetness. For this Ethiopian coffee, this means that the acidity, which is identifiable in the flavor profiles, forms one of the layers of flavors offered by the full body. In the case of this Ethiopian coffee, acidity does not play a major role, but forms one of the important layers of the flavor profile. Thanks to the natural processing, the individual flavor components intertwine – fresh grapefruit and orange do not overpower, but balance the richness of the whole cup.
