The Belgian roastery BOO! Coffee Roasters is introducing a new version of its classic Cloud Nine, this time from the Finca Buena Vista farm in Guatemala. This Gesha welcomes you in the cup with a juicy aroma of peaches and tangy tangerines, complemented by the delicate flavor of chamomile tea and intoxicating flowers. This delicate and sophisticated coffee is best savored slowly, allowing its complex flavor to shine through so you can enjoy every sip.
Luis Pedro Zelaya Aguirre has been running the Finca Buena Vista farm since 1995. The farm’s history began with seedlings donated by a close family friend. The first harvest had a unique flavor but was inconsistent. The cup you’re drinking today is the result of decades of careful breeding, which has led to cups with a unique flavor as well as healthy coffee trees. In addition to careful breeding, the resulting flavor of the coffee is also influenced by the fertile soil in the Antigua Valley and an elevation of up to 1 ,890 meters above sea level.
This coffee has undergone a washed processing method, which brings out its clean and juicy flavor profile. The coffee cherries are first carefully harvested at the peak of ripeness and then hand-sorted to remove defective or unripe ones. The pulp is then removed, and the beans are left to ferment in tanks. The beans are then carefully washed and placed on raised beds, where they dry for up to 16 days until they reach optimal moisture content.
