From the Industra Coffeeworkshop comes the award-winning Ethiopia YAYE coffee, which will captivate you with its purity and sweetness. In your cup, you will experience an explosion of ripe raspberries, juicy cantaloupe melon, and delicate peaches, supported by the elegant sweetness typical of precisely processed natural coffees. This Ethiopia is not just another successful lot, it is the coffee with which barista Miri won the Barista Cup 2024 in Ostrava. The rare single-origin lot of variety 74158 gives the cup an unusually clean, structured, and fantastically fruity expression.

The coffee comes from the young Yaye washing station in the Sidama region, founded in 2021 with the clear goal of advancing the quality of Ethiopian coffee through experimentation, rigorous sorting, and separate lots. This project was created in collaboration between Testi Coffee and Cafe Imports as part of the Odakko initiative, which focuses on creating traceable single-varietal lots, which are still a rarity in Ethiopia. Fifty small-scale farmers from the surrounding villages of Yaye and Chericho, who harvest at extreme altitudes of 2,150–2,300 meters above sea level, contributed to the final lot .

Each cherry was carefully selected and brought to the station at precisely planned times to prevent unwanted fermentation and preserve the bright fruitiness. The natural processing was carried out with unusually high precision. The cherries were first soaked in water to remove defects and then sorted by hand with a strict ratio of 95% perfectly ripe and 5% slightly overripe for an ideal sugar balance. Drying took place on raised beds in cooler areas with shade nets, slowing the process to 28 days, which significantly deepened the sweetness and complexity. After completion, the lot rested for six weeks to stabilize the flavors before heading to Addis Ababa for final processing. The result is a natural Ethiopia with an exceptionally clean expression, beautiful sweetness, and a winning character that will not leave you cold.
