The aromatic profile is floral and perfumed, juicy and fruity, with a very long, clean finish. Thanks to its lively acidity and hint of berries, this coffee excels as an espresso, but is also great as an iced coffee – when poured over ice cubes, it develops its full potential.
The origin of this coffee leads directly to Ethiopia, specifically to Shakiso in the Guji region, located at an altitude of around 1,800–2,200 meters above sea level. The lot comes mainly from the Kayon Mountain farm, owned and operated by the family of Ismael Hassen Ared. This family approach ensures that the coffee beans come from well-managed plantations where sustainability and quality are paramount.
The coffee is part of the Treat Selection range, a selection of exceptional coffees, often unavailable elsewhere, which are created thanks to direct relationships with producers and experimental processing methods. The processing of this coffee is truly unique: it uses an oxidative-fermentation method of 8-day carbonic maceration, reminiscent of winemaking techniques. During fermentation in a closed container with CO₂, the temperature and pH are carefully controlled – 12 hours at 20°C and another 12 hours at 30°C. This method promotes the formation of fruit esters and exotic aromas, which add complexity, sweetness, and smoothness to the final cup.
