The beans for this coffee come from a group of small farmers who cultivate their fields at high altitudes in the heart of Ethiopia's Gedeb region. This area is known for its ideal combination of high altitude, rich volcanic soils, and mild climate, which create the perfect conditions for growing specialty coffee. The farmers use traditional Arabica varieties that are native to this area and known for their exceptional flavor and resistance to local conditions. It is thanks to their careful work and love for coffee farming that this coffee has such a distinctive and unique flavor profile.
The cherries are picked by hand and then sorted by hand. They are placed directly into a hopper connected to a pulping machine (a traditional Agaarde disc pulper). The coffee flows from the hopper down into the pulper, which removes the husks and pulp. The machine is designed to sort the beans into high and low quality (1st and 2nd grade) based on density. The coffee is then fermented under water in tanks for an average of 72 hours, but any time between 48 and 100 hours is considered normal. The coffee is sorted again in channels so that the lower quality cherries (with lower density) float to the surface. These are removed and the denser, higher quality beans are separated as a high quality lot. The parchment is soaked in clean water and then dried on raised beds for approximately 8-20 days. The coffee is dried in layers 2-8 cm thick, depending on the climate, type of tables, and degree of drying.
