Behind this coffee is Nafkot Admasu, a producer from Gedicho, Idido, in the renowned Ethiopian region of Yirgacheffe. Her farm is truly small—it spans approximately 0.5 hectares and lies at an elevation of around 2,150 meters above sea level, where Nafkot cultivates a local heirloom variety. The high altitude and local conditions give the cherries plenty of time to ripen slowly, resulting in an aromatic profile that features floral and tea notes alongside fruity ones.
Processing is natural, so after hand-picking, the beans remain inside the whole coffee cherries during drying. Nafkot spreads them out on raised beds and lets them dry in the sun for about 12–15 days, during which time the coffee continues to absorb the sugars and aromatics from the pulp. Only then are the dried cherries stripped of the remaining fruit pulp and sent for further processing. It is precisely this dry method that helps bring out the sweeter and fruitier side of the Heirloom varieties. Thus, everything essential about this Ethiopian coffee remains in the drip bag; all it takes to prepare it is a mug, hot water, and a few minutes of your time.
