The latest addition toSydrip’s family of drip bags is a coffee that has already won over many fans: theEthiopia Halo Beriti from the Slovak roastery Concept Coffee Roasters. It captivates with its full-bodied flavor and warm character. The flavor blends notes of eggnog, chocolate, and red apples, which together create a delicately sweet yet elegant profile. The combination of naturally processed Ethiopian Arabica and the flavor modulation method — in which the green beans rest in a bourbon whiskey oak barrel after drying—gives the coffee exceptional depth and a hint of bourbon that develops beautifully, especially in a cappuccino or cold brew.
The Halo Beriti washing station is located in the renowned Yirgacheffe region, where smallholder farmers from the nearby village of Gedeb supply their cherries. These are wild heirloom Arabica varieties , grown organically in Ethiopia at an altitude of 1,950–2,150 meters above sea level. The heirloom variety represents a collection of native Ethiopian lines created through crossbreeding, not a single specific genetic variety. The coffee is certified organic, and its flavor carries the region’s characteristic clarity and fruitiness.
Processing is done using the natural method—after harvesting, the coffee cherries are spread out on concrete patios or African beds, where they dry in the sun. They are turned regularly over several days to prevent mold and unwanted fermentation. At the end of the process, the dried husks are mechanically removed in a so-called dry mill. The result is a distinctive, sweet coffee with a full body and a juicy finish.
