It was chosen as a cure for "Blue Monday" and a reminder that sunny days are just around the corner. Expect an incredibly playful and intense profile that will instantly wake you up from your lethargy. The flavor is dominated by thick blueberry jam and exotic guava, complemented by a fascinating tang reminiscent of pineapple Tepache (a fermented Mexican drink). This is a coffee for those who are not just looking for caffeine in their cup, but a real taste explosion and the joy of small things.

This lot comes from the Gedeb micro-region in Ethiopia, specifically from the Lalesa processing station and farm. The production is carried out by Ephtah, a company that focuses on top selection and precise supervision of bean quality. Coffee trees of original Ethiopian varieties (Heirloom) grow here at an impressive altitude of between 2,150 and 2,200 meters above sea level. This high altitude, combined with the unique microclimate of the Gedeb region, allows the cherries to ripen very slowly, concentrating a high sweetness and complex acidity in the beans that are unique in the world.

What gives the coffee its wild and unforgettable character is the anaerobic natural processing method. The whole coffee cherries were sealed in tanks without oxygen access, where controlled fermentation took place. It is this process that is responsible for the "funkiness" of pineapple tepache and the depth of blueberry jam. After fermentation, the coffee was traditionally dried on African beds until it reached the ideal moisture content. The result is an extremely rich, layered, and sweet profile that pushes the boundaries of how Ethiopian coffee can taste.
