Ethiopia Gedeb from Beansmith.s is a sweet and juicy lot for anyone who likes a fruitier filter coffee with a clean profile. The flavor combines blueberry cheesecake, ripe plum, and Earl Grey tea notes, which give the coffee an elegant aroma. The medium acidity nicely balances the dense body and high sweetness, making the cup rich but pleasantly drinkable. Despite its natural processing, the coffee is surprisingly clean and clear, which is underlined by its cupping score of 88 points.
The coffee comes from the Chelbesa area in the Gedeb region of the famous Yirgacheffe zone, one of the best locations for growing coffee in Ethiopia. The Worka Chelbesa processing station works with small farmers who farm on smaller plots of land and often count their farms by trees rather than hectares. The coffee trees grow at an altitude of 1,900–2,200 meters above sea level in the semi-forest shade of false banana trees and other vegetation, creating an ideal microclimate. Cultivation remains very traditional and natural—farmers use a minimum of fertilizers and pesticides, and the cherries are selectively hand-picked by the farmers and their families before being taken to a collection center or directly to the station.
This lot is composed of original Ethiopian varieties grouped under the Heirloom label. After selective hand-picking, the whole ripe cherries are first sorted by density and then dried naturally for approximately 22 days on raised beds. During drying, they are regularly turned and the moisture content is carefully checked to ensure a stable and clean final profile. Thanks to this gentle processing, the coffee retains its high sweetness, juiciness, and clearly discernible fruity character, which is so typical of natural Ethiopian coffee.
