Behind this gem is Edson Morais de Barros, who took over the plantation in 2012 and continues to unlock its immense potential. The farm itself is located in the prestigious Mantiqueira de Minas region at an elevation of 1,000 to 1,250 meters. This region boasts a Protected Geographical Indication, which guarantees cultivation in accordance with local traditions and with respect for the environment. Unlike many neighboring farms that grow the more common yellow variety, Edson has focused here on the more delicate Red Bourbon variety. In collaboration with professional agronomists and the COCARIVE association, a dedicated team of experts works year-round to ensure the highest possible quality throughout the entire production process.

The chosen processing method, known as Pulped Natural, imparts tremendous sweetness and remarkable clarity to the final beverage. Unlike most of Brazil’s giant plantations, the entire harvest on this estate is carried out exclusively by hand. The harvested cherries are processed the very same day using a traditional pulper, which carefully removes the outer skin and some of the sticky mucilage. The beans are then spread in a thin layer on drying terraces, where they dry evenly and slowly. Once the moisture content drops to the ideal 12%, the coffee is transferred to wooden crates to stabilize. After resting for one month, the green coffee undergoes final quality tests and is prepared for export.
