Christmas Ethiopia from BirdSong Coffee is a coffee that will delight all lovers of delicate, sweet, and elegantly complex flavors. The very first sip reveals a velvety smoothness that gradually develops into rich layers. Sweet caramel naturally blends with the taste of strawberries, followed by a delicate hint of almond. The whole experience is rounded off by raisins, which give the coffee a beautifully round, harmonious and long finish.
This exceptional lot comes from the Echemo family farm in the Jimma region, run by Khalid Shifa. The name of the farm and processing station refers to a local tree used for making fire – a symbol of tradition and connection to the land. Khalid is continuing the work of his father and grandfather, who originally collected coffee seedlings. As a result, the farm grows hardy Heirloom varieties, which are typical of the Jimma region for their natural vitality and complex flavor profile. Khalid invests heavily in sustainability – he promotes biodiversity, tree restoration, and educates local farmers in organic practices. He also contributes to the quality of life of his community: he supports the local school and financed the construction of an access road that made the area accessible even during the rainy season. He is actively involved in the development of the Agroforestry Nursery Site project, which combines coffee cultivation with forest ecosystem restoration and climate protection.
Etiope Echemo is a naturally processed Arabica from an altitude of 2,100 meters above sea level, which gives it a bright fruitiness, sweetness, and exceptional purity. With a cupping score of 86 and organic certification, it is a coffee that combines unique flavor with a responsible origin.
