This coffee comes from the new Chorso Bule station, located at a breathtaking altitude of 2,450 meters. It is precisely this extreme location that gives the beans extraordinary density and ample time for sugar concentration . It is a blend of native wild varieties known as Ethiopian Landrace. Given the historical tradition and political structure of the coffee trade in Ethiopia, the birthplace of the coffee plant, obtaining single-origin lots is nearly impossible. While this has been changing in recent years, progress has been very slow. The perfect clarity and distinctness of the flavor notes are the result of a precise, multi-phase washed processing method, which took place under the supervision of the renowned export company SNAP. After sorting, the hand-picked cherries were first left whole for 24 hours. Following hulling and sorting by density (Grade 1), the beans underwent a 24-hour dry fermentation, followed by a further 12-hour wet fermentation. This sophisticated process helped perfectly develop complex fruity acids. The beans were then dried for 10 to 14 days on raised beds.
