A new addition to the coffee family from The Barn has arrived—and it definitely deserves your attention. This naturally processed coffee from Ethiopia hides in its cup juicy blueberries and the sweetness of milk chocolate, followed by floral notes of jasmine and orange blossom. With its delicate profile and creamy body, this coffee is truly Ethiopian through and through.

The journey to this exceptional coffee takes us to the village of Chelbesa in the Gedeo region of Ethiopia. It is produced by a group of smallholder farmers who share a passion for growing high-quality beans. Located at an altitude of over 2000 meters, Chelbesa was established only recently by the company SNAP. The red cherries are collected from 476 small producers cultivating land in the surrounding area. The coffee grows in a semi-forested environment, shaded by trees and surrounded by other food crops such as bananas. SNAP has installed tiled fermentation tanks and 164 drying beds: 100 for washed coffee, and 64 for natural coffee.

The natural method is often used in regions with limited water access, especially in Africa and drier areas of Latin America, like Brazil. In this process, the cherries are spread on concrete patios or raised beds and dried in the sun or with mechanical dryers. The coffee is regularly turned to prevent mold and unwanted fermentation. Once drying is complete, the outer skin is mechanically removed in a dry mill. Natural processing adds characteristic flavor elements to the coffee, independent of variety or terroir. When done correctly, it brings fruity notes and a creamy body into the cup.
