Boneya Robe Chorso Bule from SEY Coffee is an Ethiopian pour-over with a beautifully clean, sweet, and juicy flavor profile. In the cup, ripe peach, watermelon, and sweet tea come together, so expect a delicately fruity profile in which the peach brings a rounded sweetness, the watermelon adds fresh juiciness, and the tea note gives the coffee a calm, elegant finish.
The coffee comes from Ethiopia, specifically the Gedeb area in the Gedeo region, where it was grown by Boneya Robe. It is a very small lot from his two-hectare farm, located at an elevation of 2,450 meters above sea level. This high altitude contributes to slower cherry ripening and a clean, concentrated flavor profile in the cup. This lot was created exclusively from cherries grown by Boneya Robe, and SEY has fully separated it as a standalone coffee for the first time this year. The Chorso Bule facility and the work of SNAP also played an important role, making it possible to process this small, carefully selected lot and bring it to market.
The beans are Ethiopian Landrace, meaning local Ethiopian varieties that possess tremendous genetic diversity. The processing is washed and carried out with great care. The cherries were hand-picked at a sugar content of over 20 Brix and only from an elevation of 2,450 m above sea level; they then underwent floating, which helps remove lighter or defective fruits. Subsequently, they rested whole in the cherry pulp for 12 hours in the shade, after which they were hulled and cleaned. The coffee was then dry-fermented for 12 hours in plastic barrels and for another 12 hours in water. Finally, it was washed by hand to remove only the mucilage and dried in the shade until the moisture content dropped to approximately 11%.
