You know those lazy weekend mornings when you’re in no rush and finally have time to really savor your coffee in peace? This Ethiopian coffee from Friedhats Coffee is perfect for moments like these. From the very first sip, it might remind you of your favorite Earl Grey tea, thanks to the refreshing bergamot that really comes through. But it’s anything but boring. After a moment, juicy mangosteen joins the mix, adding a pleasant fruity sweetness and a light, exotic spark to the entire flavor. It all blends beautifully with delicate floral notes. The result is a beautifully clean cup that will make you want to linger at the table just a little longer.
This coffee comes from the renowned Ethiopian region of Yirgacheffe, specifically the Gerse area. Behind this exceptional harvest is producer Ashenafi Getaneh, who grows his coffee trees at extreme altitudes ranging from 2,100 to 2,200 meters. Plantations at such high altitudes ensure that the cherries ripen very slowly, which directly leads to the development of complex and deep flavors within the bean. The fields are home to traditional native Ethiopian varieties, known as Heirloom, alongside locally bred cultivars 74110, 74112, and 74114. These plants possess immense genetic potential and, combined with the local microclimate, produce raw material of the highest quality.
This coffee was processed using the Red Honey method, which strikes a balance between the washed and natural processes. After harvesting the ripe cherries, machines removed only the outer skin, deliberately leaving a large portion of the sticky pulp— rich in natural sugars—on the beans. This was followed by a slow drying phase on African drying beds. The beans, coated in sweet mucilage, dried under the farmers’ supervision until the dried pulp acquired its characteristic dark red color. It is precisely this process that ensures a significant portion of the sugars is transferred directly into the bean. The coffee thus achieves a clarity approaching that of washed profiles, while retaining the distinctive sweetness typical of natural coffees.
