Its exceptional quality is due not only to the unique terroir, but also to the precise approach to the entire process. The Aricha Wubanchi processing station is located at an incredible altitude of 2,213meters above sea level andprocesses the harvest of approximately 1,700 small farmers from the surrounding area. Coffee trees are grown here on small fields near human dwellings, which gives the coffee its specific character known as garden coffee. Farmers grow traditional Ethiopian varieties known as Heirloom or Jarc, which are prized for their delicate aroma and sparkling acidity. Due to the extreme altitude, the coffee ripens more slowly, allowing the beans to develop a more complex and deeper flavor structure.
The fullywashed processing method begins with careful sorting of the cherries and subsequent fermentation, which lasts 36 to 48 hours depending on current climatic conditions. Freshly harvested cherries are taken to a station where they are washed with crystal clear water from the local Resitay River. After thorough washing, the beans are dried on raised African beds for 10 to 12 days until they reach the ideal moisture content. During drying, the beans are regularly raked to ensure a completely even result. The final stage of cleaning and manual sorting takes place in Addis Ababa, ensuring that only the purest form of Ethiopian coffee reaches you.
