We present a coffee gem from the renowned Dutch roaster Manhattan Coffee Roasters, which will transport you to the mystical heights of the Ecuadorian Andes. The flavor profile of this coffee is characterized by its exceptional lightness and floral structure, dominated by fresh acidity and the sweetness of clementines, which elegantly blend with subtle notes of white tea in the cup. The overall impression is complemented by an intoxicating aroma and aftertaste of violets, which gives the coffee a noble, almost ethereal character. It is the ideal choice for lovers of pure, tea-like and layered filter coffees that push the boundaries of modern Ecuadorian production. Behind this taste experience is an experienced roasting team led by barista champions Ben Morrow and Esther Maasdam, who have brought out the best in this coffee and proudly rank it in their highest category, "World Class."
This lot comes from José Jijón, son of legendary producer Pepe Jijón, who is transferring his experience from the renowned Finca Soledad farm to the ambitious new Fincas Del Putushio project. The farm is located in the Loja region, in the shadow of the majestic Putushio mountain, at an incredible altitude of 2,222 meters above sea level. At the heart of this lot is the Typica Mejorado variety, which in recent years has become a symbol of the quality of Ecuadorian specialty coffee. Despite its name, it is genetically a cross between Bourbon and Ethiopian landraces, which gives it exceptional elegance and sparkling acidity.
José Jijón opted for traditional washed processing to fully bring out the character of the terroir and the innate potential of this variety. After careful hand-picking at optimal ripeness, the cherries are pulped and fermented in pure spring water. Subsequent slow drying on shaded raised beds for up to 30 days ensures the stability of the flavor profile and underscores the precision with which the Jijón family approaches coffee cultivation.
