The coffee comes from the Finca Maputo farm in the La Perla area near the town of Nanegal in Ecuador’s Pichincha region. Regular afternoon mists and cooler nights slow the ripening of the coffee cherries, which enhances their natural sweetness, produces a milder acidity, and results in a more complex flavor profile. Finca Maputo is also part of a micro-lot program focused on high-quality coffees from independent Ecuadorian farmers.
This lot consists of the Typica variety processed using the washed method. After harvest, the skin and most of the pulp are removed from the cherries, followed by fermentation and thorough washing with clean water.
