Behind this coffee are the farmers of the Calderon family. The Don Cayito area is the highest farm (2,100 m above sea level) of the Costa Rican family. Mr. Ricardo has been growing coffee trees and sugar cane here since 1978. They did not establish their own processing plant until 2009. This gave him the opportunity to process cherries not only from his own farms, but also from family members and neighbors. In 2011, he won the prestigious Cup of Excellence competition. He managed to repeat this feat in 2018 and 2024. Coffee from the Calderon family was auctioned for the highest price in the history of the Costa Rican coffee trade. The family acquired this variety of their "Panamanian" Geisha from the CATIE research institute, which can guarantee its exact origin. The beans have a rather elongated, perhaps even "rice-like" shape, which is characteristic of Panamanian Geisha, as is their intense and aromatic flavor.
White Honey processing is a specific type of honey method that combines elements of dry and wet processing. In this process, after the cherries are hulled, a certain amount of mucilage is left on the beans, which is not washed off with water during drying but is left to dry naturally. In the White Honey variant, only a small amount of mucilage remains on the beans, and the coffee is often dried on raised beds in the shade to control the process as carefully as possible. The result is a very clean and delicate flavor profile that still retains its complexity and sweetness. In this case, this method has a significant impact on its elegant taste. Thanks to careful processing, this Geisha is characterized by high cup purity, delicate floral notes, pronounced sweetness, and delicate fruitiness, without overwhelming the natural characteristics of the variety. It is excellent for preparing filter coffee.
