RAINBOW from the Manhattan roastery is a coffee that will captivate you not only with its name, but above all with its juicy flavor profile, which is literally like a rainbow trip through tropical orchards. You will be greeted by notes of papaya, strawberries, and exotic dragon fruit, which together create a sweetly fruity, refreshing, and elegant experience. This 100% Pink Bourbon variety offers a light body, purity and a delicate yet playful acidity that you will appreciate both in slow filter brewing and modern brewing methods.

The coffee comes from the renowned El Vergel Estate in the Tolima region of Colombia, run by brothers Elias and Shady Bayter. Their story began in the 1990s with avocado cultivation, but when disease wiped out most of their crop, they decided to take a new direction—coffee. Today, they are among the leading pioneers of specialty coffee production in Colombia, and their farm boasts more than 28 different varieties, advanced fermentation techniques, and ongoing microbiology research. El Vergel is also the first farm in the country to implement fermentation using kōji, a unique method borrowed from Japanese cuisine. The emphasis on innovation, terroir, and quality can be tasted in every sip of their coffee.

This particular batch was processed using the anaerobic washed method – a combination of controlled fermentation and classic washing, which results in clean yet exceptionally complex flavors. After harvesting, the coffee cherries are placed in closed tanks where they ferment for several days without access to oxygen. This process promotes the development of fruity and floral tones without excessive fermentation. The beans are then washed and dried with maximum control over temperature and humidity. The result is a coffee that perfectly balances juiciness and elegance, confirming that Bayter really knows how to transform innovation into an unforgettable taste experience.

The strongest smelling coffee I've ever had
It smells like Skittles. No strawberries, papaya, or dragon fruit. Just Skittles. 10 kg of Skittles.
It also tastes like Skittles.
The ideal choice for blends where you need to "liven up" a more boring coffee or complement a more chocolatey coffee. 10% of this coffee in any blend = easy win.
Unfortunate choice of package size. 250g is really a lot for such an aromatic coffee; it cannot be consumed daily.
It is quite one-dimensional, even at ratios higher than 1:20, the taste is uniform. This is not entirely negative, but the coffee quickly becomes bland.
