Summer is all about juicy flavors, new experiences, and fragrant cups that bring joy. That's exactly what Colombia Pitaya is – a fresh new addition from the Industra roastery. This coffee offers a clean, elegant, and tropical taste experience, blending notes of plum, lychee, and caramel. The result is a balanced and sweet cup that, thanks to the pink bourbon variety, offers not only juiciness but also character and depth. The ideal choice for anyone who wants to treat themselves to a summer moment full of delicate yet distinctly defined flavors.
This coffee comes from the Huila region of Colombia, specifically from the southern part of the region, where coffee trees are grown at altitudes between 1,800 and 2,200 meters above sea level. Pink bourbon has been growing here since 2014 and has quickly gained popularity for its resistance to rust, high productivity, and exceptional quality in the cup. Producers in San Adolfo and the surrounding area often choose it as a better alternative to classic varieties such as Caturra and Castillo. Pink bourbon also stands out for its lower yield and higher proportion of peaberries – smaller, round beans that deviate from the usual size but often deliver a more concentrated flavor.
The coffee is processed using the washed method, which allows its purity and precise fruity character to shine through. Each lot is carefully analyzed both physically and sensorily before being blended to ensure it matches the desired profile. The resulting coffee is called Pitaya, referring to the dragon fruit that often grows in close proximity to coffee trees in the Huila region. This name is no coincidence: the cup reveals precisely the vibrant, tropical flavors we associate with pitaya.
