Behind every bean of this coffee is the passion and hard work of Nestor Lasso, an innovative grower from the Finca El Diviso farm in Huila-Bruselas, Colombia. Nestor is one of those exceptional producers who are not afraid to experiment, yet still honor traditional values. His farm has become a mecca for specialty coffee, producing beans that score highly in international competitions. Thanks to his approach – combining sustainability, scientific precision and a feel for the terroir – the coffee not only tastes exceptional, but also tells the story of the Colombian mountains, local traditions and innovation.
This coffee has been processed using the dry method, which contributes to its intense sweetness and distinctive fruity character. After harvesting in dry weather and hand-picking ripe cherries, fermentation takes place in four stages: 30 hours in open barrels, 24 hours anaerobically at 16–18 °C, followed by oxidation and fermentation in a BioMaster tank at 20 °C. Finally, the coffee undergoes a 36-hour bath in warm water to enhance its fruitiness. The beans are then carefully dried to ensure that the resulting coffee retains its complexity, fullness and unmistakable flavor.
