This Colombia was roasted at DAK Coffee Roasters, a roastery based in the Netherlands and one of Europe's progressive players when it comes to fine coffee and innovative processing. In this filter, DAK decided to combine subtlety and originality, resulting in a cup that delivers notes of watermelon, kiwi and cantaloupe. The result is a light, refreshing coffee with tropical fruitiness and a subtle sweetness that will appeal to anyone who enjoys a more experimental but still cleanly drinkable profile.
The coffee comes from the Colombian farm Finca Milan, located in the Huila region at an altitude of 1600 metres. The farm specializes in the caturra variety and is known for its emphasis on quality and research. The local conditions - a combination of volcanic soil, constant sunshine and alternating temperatures - allow the cherries to ripen slowly, which increases the complexity of the flavour. Finca Milan is not afraid of experimentation and, in addition to traditional methods, focuses on modern approaches that push the boundaries of coffee flavour.
This particular lot was processed using the co-fermentation method with watermelon. The coffee cherries are fermented in a bioreactor along with fruit must, starter cultures and extracts. During fermentation, the environment is deprived of oxygen and replaced by nitrogen, while pH, temperature and Brix values are constantly monitored. After fermentation, the plant mucilage is removed and drying is carried out in two stages - firstly 20 days in the sun, then 5 days mechanically to fine-tune the moisture content. The result is a cup that combines precision with playfulness.
