Sunburn coffee comes from the El Vergel farm, run by the Bayter family in the Tolima region of Colombia. Originally focused on avocado cultivation, the farm decided to switch to coffee in 2016, planting Red and Yellow Caturra varieties on a small micro-lot surrounded by guava trees. Under the guidance of experienced expert Miguel Jimenez, the farmers began experimenting with fermentation methods, which led to the creation of an exceptional and innovative production. El Vergel has become one of the most interesting and innovative coffee producers in Colombia, with a focus on sustainability and a community-based approach that means the coffee is not only high quality but also responsibly grown.
Sunburn coffee is processed using natural anaerobic fermentation, which lasts 48 to 60 hours. After fermentation, the coffee cherries are dried on raised beds until their moisture content drops to 30%. The drying process is then completed using low-temperature mechanical drying to achieve a moisture content of 16-18%. After stabilizing for 45 days in GrainPro bags, the coffee is ready for export. This meticulous process ensures that the resulting coffee is clean, intense, and full of tropical fruit tones, which, combined with its complexity, create a unique experience in every cup.
