This Mañana from Belgian roaster 2:am Coffee Roasters is exactly the type of espresso you make automatically in the morning without even thinking about it. The name refers not only to Spanish, but also to the feeling of "now and tomorrow" – coffee that becomes part of your daily ritual. The taste first envelops you with a delicate sweetness reminiscent of nougat, followed by the fruitiness of candied fruit and a smooth chocolate finish. The acidity is rather light, just enough to prevent the coffee from tasting flat, and the body is round and smooth.
Behind this coffee are producers from an association called Grupo Sierra, operating in the Sierra Nevada de Santa Marta region of Colombia. This area not only has a unique microclimate, but also a powerful story – the land on which the coffee trees grow was obtained by farmers through land restitution programs after years of conflict. A community that once fought for survival has become a group of specialty coffee growers with an emphasis on sustainability and organic certification. Today, they grow Castillo, Colombia, and Caturra varieties and focus on quality and nature conservation.
The coffee is processed using the washed method – freshly harvested cherries are processed on the same day to preserve their freshness. Fermentation takes 13 to 15 hours, after which the coffee is dried on African beds in full sun for approximately 15 to 20 days. This process guarantees a balanced profile with a clean taste and natural sweetness. The roaster emphasizes transparency – they have established direct contact with Grupo Sierra and plan to visit the farm in person to better understand where this coffee comes from and share its story directly with customers.
